Oven Roasted Broccoli Recipe

Broccoli may be a kid’s least-liked vegetable, but most adults can’t get enough of the stuff! Good thing, cause this cabbage cousin can help combat vitamin D deficiency – an ongoing problem in rainy Vancouver. Thanks to Hannah of Honey & Jam, who adapted this recipe for Oven Roasted Broccoli from Epicurious!

Oven RoastedBroccoli Recipe

1-1/4 pounds broccoli crowns, cut into florets (about 8 cups)

4-1/2 tbsp olive oil, divided

Salt and pepper to taste

3 garlic cloves, minced

Large pinch dried crushed red pepper

 

Preheat oven to 450 F. In a large bowl, toss broccoli with 4 tbsp oil to coat. Sprinkle with salt and pepper. Transfer to baking sheet. Roast 15 minutes. Stir remaining oil, garlic and red pepper in bowl and drizzle mixture over broccoli, tossing to coat. Roast until broccoli begins to brown (about 8 minutes). Season to taste with salt and pepper and serve immediately.
